May I use canned vegetables, such as carrots,  peas, or corn, if the ingredients are only the vegetable, water, and salt, but they have an unreliable hechsher, or no hechsher at all?

A

No. Canned vegetables require a reliable hechsher. Although the ingredient list may appear simple, there are several kashrus concerns. Most notably, commercial canning facilities use
large, high-temperature pressure cookers (retorts) that are often shared with non-kosher products, such as meat, soups, and sauces. Since the vegetables are processed on this shared equipment,
reliable kosher supervision is required.
